SALSA BEARNESA «ADELGAZANTE»

 

100 ml de leche concentrada sin azúcar o 100 ml de nata líquida 0% MG

3 yemas de huevo

1 pizca de vino blanco

1 chalota hermosa picada

Estragón fresco

Perejil fresco

3 cucharadas de vinagre de sidra

1 cucharada de granos de pimienta negra

Sal

 

Moler los granos de pimienta en un mortero.

En un sauté pequeño, reducir la chalota + vinagre + pimienta + hojas de estragón.

En cuanto reduzca ligeramente, retirar del fuego.

En un bol sobre hielo, montar con unas varillas la leche concentrada o la nata 0% MG.

En otro bol, colocar las yemas y montarlas al baño maría + vino blanco.

Añadir la reducción de vinagre y seguir montando al fuego.

Cuando las yemas estén montadas, añadir poco a poco la nata o la leche montada.

Picar sobre la tabla el estragón + perejil y añadirlos a la salsa.

Rectificar la sazón.

Listo.
