REMOLACHA CON QUESO Y PAVO

 

1 paquete de remolacha cocida entera

1 puñado de avellanas tostadas

1 puñado de hojas de perejil

1 puñado de hojas de menta fresca

1 puñado de hojas de albahaca

1 ramillete de cebollino fresco

200 g de queso fresco cremoso 0% MG

1 pizca de leche desnatada

Aceite de nuez

Vinagre dulce de Pedro Ximénez

Germinados frescos

200 g de fiambre de pavo

Aceite de oliva, sal y pimienta

 

Picar sobre la tabla el perejil + menta + albahaca + cebollino, dejando algunas hojas sin picar, enteras. En un mortero, romper las avellanas y añadirle el queso + leche + hierbas picadas + aceite de nuez + aceite de oliva + sal + pimienta. Sobre la tabla, rebanar en rodajas las remolachas y montarlas como si fueran milhojas, intercalando capas de crema de queso y hierbas aromáticas. Hacer una vinagreta con aceite de oliva + vinagre dulce + sal + agua, y aliñar los germinados (y con el jugo de remolacha, si se quiere). Colocar alrededor de las remolachas el fiambre de pavo + germinados. Rociar con la vinagreta. Listo.
