CARRILLERAS DE CERDO

AL CURRY

 

9 carrilleras de cerdo (1 kg)

2 zanahorias picadas (80 g)

3 cebollas picadas (375 g)

15 g de jengibre picado

1 tallo de citronella o limoncillo (15 g)

1 rama de apio picada (30 g)

5 g de harina

500 ml de txakoli

100 ml de leche de coco sin azúcar

2,5 g de curry

25 g de mantequilla

15 ml de aceite de oliva virgen extra

Sal y pimienta

 

Picar la citronella o limoncillo.

Marcar las carrilleras en una cazuela con el aceite a fuego vivo, retirar y reservar.

Sudar toda la verdura con mantequilla + aceite junto con el jengibre y la citronella a fuego medio, durante 7 min.

Echar la harina, dar unas vueltas y mojar con el txakoli; dejar evaporar el alcohol durante 2 min más y añadir el curry.

Incorporar las carrilleras y guisar a fuego suave, tapado, durante 1 h y 10 min aprox.

Pasado este tiempo, agregar la leche de coco y cocer 20-30 min más o hasta que las carrilleras estén bien blandas.

Quitar con cuidado las carrilleras y triturar toda la salsa, luego pasarla por un colador fino, volver a incorporar las carrilleras y guisar otros 5 min.

Rectificar de sal y pimienta, y servir bien caliente.
