«STEAK» TÁRTARO DE ATÚN

 

500 g de atún crudo

1 aguacate maduro

2 chalotas picadas

1 chile fresco

1 pizca de jengibre fresco

Perejil picado

1 pizca de mostaza

2 huevos

1 pizca de salsa de soja

1 pizca de aceite de oliva virgen

1 pizca de aceite de sésamo

1 pizca de zumo de limón

Cebollino picado

Sal y pimienta recién molida

 

Además:

1 pizca de yogur descremado

1 pizca de rábano picante

Eneldo fresco

Pimentón de La Vera

 

Sobre la tabla, picar el lomo de atún a cuchillo y colocarlo en un bol.

Picar el aguacate y añadirlo.

Lavar las chalotas en un colador fino y escurrirlas en un trapo; añadirlas.

Picar el chile + jengibre y añadirlos al bol junto con el resto de los ingredientes.

Por último, mezclar el yogur + rábano + sal + pimienta + eneldo picado, servir de salsa.

Espolvorear el pimentón.
