CALDO DE POLLO

 

2 pollos limpios, enteros

1 ramillete de tomillo fresco

1 hoja de laurel

15 tallos de perejil fresco

2 puerros limpios

2 ramas de apio

2 zanahorias peladas

1 cucharada de pimienta negra en grano

4 cebolletas hermosas

Agua

Sal gruesa

 

Lavar los pollos en la fregadera y sumergirlos en el agua hirviendo.

Hacer un atadillo con tomillo + laurel + tallos de perejil.

Hacer otro atadillo con los puerros + apio + zanahorias.

Encerrar la pimienta en una gasa + liz.

Cuando el agua hierva, escurrir los pollos y lavarlos en agua fría.

Meterlos en la misma olla + agua fría + 2 ramilletes + pimientas + cebolletas + pellizco de sal.

Hervir a fuego suave unas 2 h, eliminando las impurezas.

Listo.

El caldo se congela en recipientes apropiados.

Con la carne y la verdura puede hacerse ropa vieja, sopas o tortillas.
