LUBINA GUISADA

 

1 lubina muy hermosa, limpia

3 cebolletas hermosas picadas

4 dientes de ajo picados

1 pizca de guindilla fresca

3 patatas nuevas medianas, peladas

1 pizca de harina

1 chorrete de txakoli

1 puñado de guisantes tiernos

1 puñado de habas

Perejil picado

Aceite de oliva

Agua y sal

 

En una cazuela ancha y baja, pochar las cebolletas + ajos + guindilla + aceite + sal.

Trocear el pescado en rodajas sobre la tabla, partir en dos las cabezas y sazonar generosamente.

Trocear las patatas en rodajas finas con la mandolina.

Añadir al sofrito una pizca de harina + patatas estiradas, y remover con alegría.

Mojar con txakoli.

Colocar el pescado sobre las patatas y agregar un poco de agua.

Cubrir y dejar que guise durante 5 min.

Destapar, dar la vuelta al pescado, añadir una pizca más de agua y dejar que guise otros 5 min.

Destapar, espolvorear perejil + guisantes + habas, y añadir un chorro de aceite en crudo.

Listo.

 

Observaciones: Este guiso se puede hacer con rodaballo, perlón, besugo, faneca, dorada o platuxa.

Al sofrito de cebolla + patatas se le pueden añadir tomate y pulpa de choriceros.

Al final, pueden añadirse guisantes congelados, puntas de espárrago o huevo duro.
