ESPALDILLA «MARENGO»

 

1 kg de espaldilla de ternera, limpia de grasa y pellejos

1 cebolla roja picada

5 dientes de ajo picados

1 rama de apio picada

1 atadillo aromático

1 atadillo de rabos de perejil

1 ramillete de tomillo

3 tomates maduros

2 cucharadas de concentrado de tomate

1 chorrete de vino blanco

1 pastilla de caldo

Aceite de oliva

Sal y pimienta

 

Para la guarnición «Marengo»:

250 g de patatas muy pequeñas, peladas y cocidas en agua

200 g de champiñones «botón» muy pequeños

200 g de cebollitas salseras pequeñas, peladas

1 pizca de miel

Poner la tetera con agua caliente.

Sobre la tabla, trocear la espaldilla en pedazos.

En una olla amplia con aceite, dorar los pedazos de ternera + sal + pimienta.

Añadir la cebolla roja + ajos + apio + tomillo + atadillos + tomates rallados + concentrado de tomate, y rehogar unos minutos.

Mojar con el vino + pastilla de caldo + agua sin cubrir (no es una sopa) + sal + pimienta.

Guisar 90 min (cubierto 60 min y destapado 30 min, para que se espese la salsa).

En una sartén con aceite, dorar los champis + cebollitas + miel + sal.

Añadir una pizca de agua y cocinar 15 min o hasta que el jugo desaparezca.

Juntar la carne + guarnición «Marengo» + pimentar.

Colocar por encima las patatas hervidas.
