MENESTRA DE CORDERO GUISADA

 

1 kg de paletilla de cordero lechal deshuesada

3 ramas de tomillo fresco

1 ramita de romero fresco

1 hoja de laurel

1 pizca de pimentón picante

2 patatas medianas peladas

3 zanahorias medianas peladas

2 cebolletas picadas

5 dientes de ajo laminados

5 alcachofas limpias

2 cucharadas soperas de concentrado de tomate

1 vaso de vino oloroso

1 pastilla de caldo de pollo

1 puñado de habas y guisantes cocidos, repelados

Aceite de oliva

Sal y pimienta

 

Poner la tetera con agua al fuego.

Sobre una tabla, cortar el cordero en pedazos hermosos, eliminando la grasa.

En una olla baja y ancha antiadherente, dorar en aceite los pedazos de cordero + sal + pimienta + tomillo deshojado + romero deshojado + laurel.

Añadir las patatas troceadas + zanahorias + cebolletas + ajos + alcachofas troceadas + pimentón, y sofreír.

Agregar el concentrado de tomate + vino oloroso + pastilla de caldo, y reducir.

Añadir una pizca de agua y salpimentar.

Guisar cubierto durante 1 h aprox., añadiendo agua si fuera necesario, poco a poco.

Añadir las habas + guisantes cocidos.

Rectificar la sazón.

Listo.
