CORDERO GUISADO «BEREBER»

 

2 piernas de cordero cortadas en pedazos de 8 cm, con hueso

1 pizca de harina

4 dientes de ajo muy picados

1 pedazo hermoso de jengibre pelado, muy picado

6 chalotas muy picadas

1 cucharada sopera de pulpa de guindilla picante Zubia

1 ramillete de menta (tallos picados y hojas toscamente picadas)

1 chorrete de vinagre de sidra

1 cucharada hermosa de ras-el-hanout

2 zanahorias gruesas cortadas al bies en rodajas gruesas

12 cebollitas francesas peladas, partidas en dos

6 pedazos hermosos de calabaza

2 tomates medianos troceados

16 orejones de albaricoque

1 chorrete de miel

1 hoja de laurel

2 l de caldo de carne

8 patatas medianas

Aceite de oliva

Sal y pimienta

 

En una olla ancha, dorar los pedazos de cordero por todas las caras + harina + sal + pimienta.

Una vez dorados, escurrirlos.

Añadir al fondo los ajos + jengibre + chalotas + pulpa de guindilla + tallos de menta + ras-el-hanout, y rehogar suave.

Añadir el vinagre y dejar reducir unos segundos.

Añadir los trozos de cordero.

Añadir las zanahorias + cebollitas + calabaza + tomates + orejones + miel + laurel + sal + pimienta, y dar unas vueltas.

Añadir el caldo de carne.

Guisar a cubierto unos 90 min.

25 min antes de terminar el guiso, incorporar las patatas.

Añadir las hojas de menta picadas y remover.

Rectificar la sazón.

Listo.
