BURRITOS DE ATÚN CLARO

 

1 cebolleta en tiras

6 pimientos del piquillo en tiras finas

3 dientes de ajo picados

1 pizca de cayena

2 huevos

4 tortillas de maíz

1 trozo hermoso de queso de Burgos

Atún claro al natural

Salsa romesco «Salomé» fría

Aceite y sal

 

Pochar la cebolleta + piquillos + aceite + sal.

Añadir el ajo + cayena, y rectificar la sazón.

La verdura debe quedar tersa y escurrida, sin salsa.

En una sartén antiadherente, hacer un huevo a la plancha por los dos lados + sal. Cortarlo en dos mitades sobre la tabla.

Cortar en rodajas el queso de Burgos.

Extender las tortillas de maíz sobre la tabla y rellenarlas de huevo + verdura + romesco + atún claro + queso de Burgos.

Cerrar las tortillas apretando bien y colocarlas sobre la sartén al fuego + pizca de aceite.

Dorar las tortillas por todas las caras.

Sacar los burritos dorados de la sartén.

Cortarlos en dos.

Listo.
