CREMA DE CALABACÍN «DELUXE»

 

800 g de calabacines enteros

2 l de caldo de verduras o de carne

1 cebolleta tierna picada

1 rama de apio picada

1 ramillete de menta fresca

1 diente de ajo

300 g de queso fresco cremoso 0% MG

1 taza de hojas de espinaca crudas, lavadas

1 ramillete de albahaca fresca

Aceite de oliva

Sal y pimienta

 

Sofreír en una olla la cebolleta + apio + ajo + aceite + sal.

Pelar los calabacines y reservar las pieles; luego, cortarlos en pedazos menudos.

Picar las pieles de calabacín y reservarlas.

Echar la pulpa del calabacín al sofrito, rehogar + caldo hirviendo + sal, y hervir 20 min.

Hacer un atadillo con la menta fresca, que incorporaremos a los 20 min con el fuego apagado + pieles de calabacín.

Añadir las pieles de calabacín y el atadillo, y dejar 5 min.

Tras 5 min de infusión, retirar el atadillo y triturar en la batidora.

Triturar la crema + queso desgrasado + hojas de espinaca crudas.

Rectificar la sazón.

Poner en la nevera a enfriar.

Cortar en tiras finas la menta + albahaca, y mezclar con el resto del queso + aceite + sal + pimienta.

Colocar la crema fría en un plato hondo + queso + hilo de aceite.

Listo.
