POLLO AL ESTRAGÓN

 

4 muslos de pollo de grano partidos en 8 pedazos

1 ramillete hermoso de estragón fresco

20 cebollitas salseras peladas

6 chalotas hermosas peladas

1 pizca de harina

1 cucharada de tomate concentrado

100 ml de vinagre de estragón

1 pastilla de caldo

1 chorrazo de vino blanco

300 g de tomates cherry

Sal y pimienta

 

Salpimentar los pedazos de pollo sobre el papel.

En un sauté antiadherente, dorarlos bien y retirarlos a una fuente.

Atar el estragón fresco.

Cortar las chalotas en pedazos gruesos.

Añadir las cebollitas salseras + chalotas + harina + tomate concentrado, y remover.

Verter el vinagre de estragón y dejar evaporar + pastilla de caldo + estragón fresco.

Añadir el vino + la mitad de los tomates cherry, y machacar con el aplastador.

Incorporar los pedazos de pollo, remover, cubrir y guisar durante 40 min.

Partir en dos la otra mitad de los tomates cherry, añadirlos al guiso y hervir 5 min más.

Rectificar la sazón.
