9. Cranberry and Walnut Scones

Ingredients
- 2 cups almond flour
- 2 tablespoons ground flax seed
- 1/4 cup raw honey
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon sea salt
- 5 tablespoons unsalted low-fat butter, frozen
- 1 large free-range egg
- 1/2 cup sour cream
- 1 teaspoon pure vanilla extract
- 1 cup dried cranberries
- 3/4 cup walnuts, chopped
- 1 teaspoon lemon zest, finely chopped
Directions
- Preheat oven to 400 degrees f. Line a baking sheet with parchment paper.
- Combine flour, ground flax seed, honey, baking powder, baking soda and salt in a bowl. Grate the butter then add into the flour mixture.
- Whisk together the egg, sour cream, and vanilla until smooth then stir into the flour mixture.
- Fold in the dried cranberries, walnuts, and lemon zest.
- Shape the dough into a ball and flatten, about 3/4-inch thick, onto the baking sheet.
- Cut dough into 6 wedges.
- Bake for 15-20 minutes, or until golden.
- Transfer to a wire rack and cool for 5 minutes.
