1. Chunky Peanut Butter Fudge

Ingredients
- 1 3/4 cup organic almond milk
- 1/2 cup organic low-fat creamy peanut butter
- 1/4 cup raw honey
- 1/2 cup dark chocolate chips
- 1 cup peanuts, chopped
- 1 teaspoon pure vanilla extract
Directions
- Line an 8-inch square baking pan with parchment paper.
- Stir together almond milk, peanut butter, and honey in a heavy saucepan over medium heat, until just bubbly.
- Remove pan from heat then stir in chocolate, peanuts and vanilla.
- Spread mixture evenly into the baking pan then let cool. Cover and chill in the fridge for 1 hour, or until firm.
- Cut fudge into squares and serve.
