12. Zesty Tuna Sandwich

Ingredients
- 1/4 cup gluten-free soy sauce
- 1/4 cup orange juice
- 1/4 cup green onions, chopped
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon lemon juice
- 2 teaspoons raw honey
- 1 clove garlic, minced
- 1/2 teaspoon ground black pepper
- 8 ounce flaked light tuna, drained
- Olive oil for greasing
- 8 thick slices gluten-free bread
- 1/4 cup light mayonnaise
- 4 lettuce leaves
Directions
- Place tuna steaks in a large dish. Combine the soy sauce, orange juice, green onions, olive oil, lemon juice, honey, garlic, and black pepper then pour mixture over tuna; turn to coat. Cover, and marinate in the fridge for at least 30 minutes.
- Grease grill grate with olive oil. Preheat grill to high heat.
- Cook the tuna steaks for 5 to 6 minutes each side; baste with the marinade on each side. Flake grilled tuna steaks to bite-size pieces.
- Spread 1 tablespoon mayonnaise on each bread then top with the flakes tuna, lettuce, and another bread slice.
