8. Carrot Almond Muffins

Ingredients
- 1 cup blanched almond flour
- 1/4 teaspoon baking soda
- 2 eggs
- 1 tablespoon raw honey
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon apple cider vinegar
- 1 cup carrots, finely chopped
- 1/2 cup roasted almonds, chopped
- 1/2 cup raisins
Directions
- Preheat oven to 350°f. Line a muffin pan with parchment paper.
- Mix almond flour and baking soda in a large bowl. Whisk together eggs, honey, cinnamon, and vinegar in a separate bowl then stir into the flour mixture.
- Fold in the carrots, almonds, and raisins.
- Scoop batter into muffin pan.
- Bake for 15-18 minutes, until lightly browned and a toothpick inserted into center of the muffin comes out clean.
