7. Vegetarian Casserole

Ingredients
- 2 teaspoons fresh parsley, chopped
- 1 1/2 teaspoons fresh marjoram, chopped
- 1 1/2 teaspoon fresh basil, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 medium zucchini, cut into 1 1/2-inch chunks
- 1 butternut squash, peeled, seeded, and cut into 1 1/2-inch chunks
- 6 tomatoes, cut into 1 1/2-inch chunks
- 1/2 cup whole fresh mushrooms, halved
- 1 green bell pepper, cut into 1 1/2-inch chunks
- 1 large onion, cut into 1 1/2-inch chunks
- 4 cloves garlic, peeled
- 1/4 cup tomato sauce
- 1 1/2 tablespoon olive oil
- 1 cup shredded lettuce
- 1/2 cup parmesan cheese, grated
Directions
- Preheat oven to 375 degrees f (190 degrees c).
- Stir together parsley, marjoram, basil, salt, and pepper.
- Combine vegetables into a roasting pan then sprinkle with parsley mixture. Mix tomato sauce and olive oil then pour over vegetables.
- Bake for 2 hours and 30 minutes, adding a little water about halfway through cooking.
- Top with shredded lettuce and cheese then serve.
