7. Vegetarian Casserole

Ingredients

  • 2 teaspoons fresh parsley, chopped
  • 1 1/2 teaspoons fresh marjoram, chopped
  • 1 1/2 teaspoon fresh basil, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 medium zucchini, cut into 1 1/2-inch chunks
  • 1 butternut squash, peeled, seeded, and cut into 1 1/2-inch chunks
  • 6 tomatoes, cut into 1 1/2-inch chunks
  • 1/2 cup whole fresh mushrooms, halved
  • 1 green bell pepper, cut into 1 1/2-inch chunks
  • 1 large onion, cut into 1 1/2-inch chunks
  • 4 cloves garlic, peeled
  • 1/4 cup tomato sauce
  • 1 1/2 tablespoon olive oil
  • 1 cup shredded lettuce
  • 1/2 cup parmesan cheese, grated

Directions

  • Preheat oven to 375 degrees f (190 degrees c).
  • Stir together parsley, marjoram, basil, salt, and pepper.
  • Combine vegetables into a roasting pan then sprinkle with parsley mixture. Mix tomato sauce and olive oil then pour over vegetables.
  • Bake for 2 hours and 30 minutes, adding a little water about halfway through cooking.
  • Top with shredded lettuce and cheese then serve.
