4. Coconut Cashew Macaroons

Ingredients
- 2 large egg whites
- 1/4 cup raw honey
- 1/2 teaspoon pure vanilla extract
- 1/4 teaspoon sea salt
- 2 1/2 cups unsweetened coconut flakes
- 1/2 cup roasted cashews, chopped
- 1 cup cold water
Directions
- Preheat the oven to 350 degrees f. Line a baking sheet with parchment paper.
- Whisk together all ingredients in a bowl. Chill the batter for 30 minutes. Stir the batter a few times after removing from the fridge.
- Dip a 2-tablespoon scoop of the batter in cold water, and then scoop out onto the prepared baking sheet.
- Bake the macaroons for 10 to 12 minutes, until golden brown. Cool for 10 minutes on the baking sheet, and then transfer to wire rack before serving.
