7. No Flour Chocolate Cake

Ingredients
- coconut oil for greasing
- 1/2 cup water
- 3/4 cup unrefined brown sugar
- 1/4 teaspoon sea salt
- 18 ounce semisweet chocolate chips
- 1/2 cup unsalted butter
- 6 eggs
- 3/4 teaspoon of mint extract
- 1 teaspoon pure vanilla extract
Directions
- Preheat oven to 300 degrees f (150 degrees c). Grease a 10-inch round cake pan with coconut oil.
- Stir together the water, sugar, and salt in a saucepan over medium heat until completely dissolved and set aside.
- Melt chocolate in microwave then pour into the bowl of an electric mixer. Beat in the butter, eggs, sugar mixture, mint and vanilla extract.
- Pour batter into the cake pan. Put the cake pan in a larger pan filled with boiling water halfway up the sides of the cake pan. Place pan in the preheated oven.
- Bake cake for 45 minutes.
- Cool for 10 minutes then invert into a plate and serve.
