2. Cheese Cupcakes

Ingredient
- 3 (8 ounce) packages low-fat, sugar-free cream cheese
- 2 cups unrefined brown sugar, divided
- 4 eggs
- 2 tablespoons gluten free almond flour
- 2 teaspoons vanilla extract, divided
- 8 ounces sour cream
- 1/2 cup strawberries, sliced
- 1 cup walnuts, coarsely chopped
Directions
- Preheat oven to 350 degrees F (175 degrees C). Line a cupcake tin with paper liners.
- Combine cream cheese and 1 cup brown sugar in a medium bowl. Gradually add the eggs then stir in the almond flour and 1 teaspoon vanilla. Scoop pastry mixture into cupcake tin; filling about 3/4 of the way.
- Bake for 30 minutes until golden brown.
- Combine the remaining brown sugar and vanilla, and the sour cream in a bowl; whisk together until smooth. Spread sour cream mixture on the top of each cupcake. Return to the oven and bake for 5 minutes.
- Let cool then garnish each cupcake with strawberry slices and chopped walnuts.
