4. Gluten-Free Coconut Pumpkin Bread

Ingredients

  • Coconut oil for greasing
  • 1/2 cup coconut flour
  • 1 tablespoon ground cinnamon
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 5 eggs
  • 1 cup organic pumpkin puree
  • 1 tablespoon apple cider vinegar
  • 1/4 cup extra-virgin coconut oil, melted
  • 2 tablespoons raw honey

Directions

  • Preheat oven to 400 degrees F. Grease an 8×8 inch baking dish with coconut oil.
  • Whisk together the first 7 ingredients in a large bowl. Gradually whisk in eggs, pumpkin puree, cider vinegar, coconut oil, and honey. Pour the batter into the baking dish.
  • Bake for 25 minutes, until a toothpick inserted into center of the bread comes out clean.
