4. Gluten-Free Coconut Pumpkin Bread

Ingredients
- Coconut oil for greasing
- 1/2 cup coconut flour
- 1 tablespoon ground cinnamon
- 2 teaspoons ground ginger
- 1 teaspoon ground cloves
- 1 teaspoon ground nutmeg
- 1 teaspoon baking soda
- 1/4 teaspoon sea salt
- 5 eggs
- 1 cup organic pumpkin puree
- 1 tablespoon apple cider vinegar
- 1/4 cup extra-virgin coconut oil, melted
- 2 tablespoons raw honey
Directions
- Preheat oven to 400 degrees F. Grease an 8×8 inch baking dish with coconut oil.
- Whisk together the first 7 ingredients in a large bowl. Gradually whisk in eggs, pumpkin puree, cider vinegar, coconut oil, and honey. Pour the batter into the baking dish.
- Bake for 25 minutes, until a toothpick inserted into center of the bread comes out clean.
