9. Sautéed Scallops Pasta

Ingredients
- 3/4 pound gluten-free angel hair pasta
- 1 1/2 tablespoons butter
- 1 1/2 pounds fresh sea scallops, rinsed and quartered
- 1/4 teaspoon sea salt
- 1/8 teaspoon white pepper
- 3 cloves garlic, minced
- 1 onion, minced
- 1 1/2 tablespoons freshly squeezed lemon juice
- 1/4 cup white wine
- 1 1/2 tablespoons fresh chives, chopped
- 1 tablespoon fresh parsley, chopped
Directions
- Cook pasta according to package directions, until al dente. Drain and set aside.
- Melt butter in large skillet over medium heat.
- Add scallops and cook for 5 to 6 minutes, or until firm and opaque; stirring constantly. Season with salt and pepper.
- Transfer cooked scallop to serving plates and set aside.
- Sauté garlic in the skillet, until golden brown. Add the onion and cook until translucent.
- Stir in lemon juice, wine, and chives; simmer for 2 minutes, stirring occasionally. Remove skillet from heat.
- Toss cooked scallops with the sauce, and then spoon over pasta. Sprinkle with chopped parsley on top and serve.
