6. Lemon Blueberry Cake

Ingredients
- coconut oil for greasing
- 6 eggs
- 1 cup almond milk
- 1/4 cup raw honey
- 1 tablespoon pure vanilla extract
- 1/2 teaspoon cinnamon
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest, finely chopped
- 1/2 cup coconut butter, melted
- 2/3 cup coconut flour, sifted
- 1/4 teaspoon sea salt
- 1 cup fresh blueberries
Directions
- Preheat oven to 350 degrees. Grease an 8 inch cake pan with coconut oil.
- Place the eggs, almond milk, honey, vanilla, cinnamon, lemon juice, lemon zest, and coconut butter in a blender and blend until smooth.
- Mix the coconut flour and salt then add to the batter. Stir in the blueberries.
- Pour batter into the prepared cake pan, and bake for 35-40 minutes. Cool and serve.
