6. Lemon Blueberry Cake

Ingredients

  • coconut oil for greasing
  • 6 eggs
  • 1 cup almond milk
  • 1/4 cup raw honey
  • 1 tablespoon pure vanilla extract
  • 1/2 teaspoon cinnamon
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest, finely chopped
  • 1/2 cup coconut butter, melted
  • 2/3 cup coconut flour, sifted
  • 1/4 teaspoon sea salt
  • 1 cup fresh blueberries

Directions

  • Preheat oven to 350 degrees. Grease an 8 inch cake pan with coconut oil.
  • Place the eggs, almond milk, honey, vanilla, cinnamon, lemon juice, lemon zest, and coconut butter in a blender and blend until smooth.
  • Mix the coconut flour and salt then add to the batter. Stir in the blueberries.
  • Pour batter into the prepared cake pan, and bake for 35-40 minutes. Cool and serve.
