9. Zesty Beef Meatballs

Ingredients
- 1 egg
- 1/2 teaspoon sea salt
- 1/4 teaspoon ground black pepper
- 1/4 cup gluten-free instant rice
- 1 tablespoon fresh cilantro leaves, chopped
- 2 cloves garlic, chopped
- 1/4 cup onion, chopped
- 1 green bell pepper, diced
- 1 pound lean ground beef
- Olive oil for greasing
- 2 3/4 cups tomato sauce
- 1/4 cup gluten-free Worcestershire sauce
Directions
- Beat egg in a bowl then season with salt and pepper. Stir in rice, cilantro, garlic, onion, and bell pepper.
- Add the ground beef and combine well.
- Shape mixture into 1 1/2 inch meatballs.
- Grease a large skillet with olive oil then place over medium heat.
- Cook meatballs until brown on all sides.
- Stir together the worcestershire sauce and tomato sauce until smooth then pour over meatballs.
- Simmer covered for 20 to 30 minutes; stirring occasionally.
