13. Spinach Tofu Scramble

Ingredients

  • 2 tablespoons olive oil
  • 3/4 cup fresh shitake mushrooms, sliced
  • 2 medium tomatoes, diced
  • 3 cloves garlic, minced
  • 1 green bell pepper, seeded diced
  • 1 bunch spinach, rinsed
  • 1 pound firm or extra firm tofu, well pressed and crumbled
  • 1/2 teaspoon fresh ginger, chopped
  • 1/2 teaspoon gluten-free soy sauce
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon pepper

Directions

  • Heat olive oil in a medium skillet over medium heat. Add the mushrooms, tomatoes, garlic, and green bell pepper; sauté for 3-4 minutes.
  • Reduce heat to medium low and stir in spinach, tofu, ginger, and soy sauce.
  • Cook covered for 5 to 7 minutes, stirring occasionally. Season with salt and pepper.
