Ingredients
- 2 tablespoons olive oil
- 3/4 cup fresh shitake mushrooms, sliced
- 2 medium tomatoes, diced
- 3 cloves garlic, minced
- 1 green bell pepper, seeded diced
- 1 bunch spinach, rinsed
- 1 pound firm or extra firm tofu, well pressed and crumbled
- 1/2 teaspoon fresh ginger, chopped
- 1/2 teaspoon gluten-free soy sauce
- 1/2 teaspoon sea salt
- 1/4 teaspoon pepper
Directions
- Heat olive oil in a medium skillet over medium heat. Add the mushrooms, tomatoes, garlic, and green bell pepper; sauté for 3-4 minutes.
- Reduce heat to medium low and stir in spinach, tofu, ginger, and soy sauce.
- Cook covered for 5 to 7 minutes, stirring occasionally. Season with salt and pepper.
