Ingredients
- Coconut oil for greasing
- 3/4 cup hazelnut flour
- 1/2 cup gluten-free rolled oats
- 1/4 teaspoon sea salt
- 1/4 teaspoon baking soda
- 1/4 cup pure maple syrup
- 1 teaspoon pure vanilla extract
- 3 tablespoons coconut oil
- 1 cup dried cranberries
- 1/2 cup pumpkin seeds
- 1/2 cup unsweetened shredded coconut
- 1/2 cup raisins
Directions
- Preheat oven to 350 degrees f. Grease an 8 x 8 inch baking dish with coconut oil.
- Stir together flour, oats, salt, and baking soda in a large bowl. In another bowl, combine maple syrup, vanilla, and coconut oil then pour into the flour mixture.
- Add dried cranberries, pumpkin seeds, shredded coconut, and raisins.
- Press and flatten the dough evenly into the baking dish.
- Bake for 20 minutes.
- Cool, cut into 7 bars then serve.
