Ingredients
- 1 cup skim milk
- 2 tablespoons unsweetened shredded coconut
- 1 tablespoon flax meal
- 2 tablespoons gluten-free pumpkin seed meal
- 1 teaspoon ground cinnamon
- 1/2 cup raisins
- 3/4 cup walnuts, chopped
- 1 ripe banana, sliced
Directions
- Stir together the milk, coconut, flax meal, pumpkin seed meal in a saucepan; sprinkle with cinnamon.
- Bring to a boil then stir in raisins and walnuts. Simmer porridge for 3-4 minutes until thick and bubbly.
- Ladle porridge into bowls.
- Garnish with sliced bananas and serve warm.
