1. Sautéed Green Beans and Cherry Tomatoes

Ingredients
- 1 1/2 pounds green beans, trimmed and cut into 2 inch pieces
- 1 1/2 cups water
- 3 tablespoons olive oil
- 2 cloves garlic, crushed and chopped
- 1 small shallot, chopped
- 2 cups cherry tomato halves
- 1/4 teaspoon pepper
- 1 1/2 teaspoons fresh basil, chopped
- 2 teaspoons raw honey
Directions
- Pour water and beans in a large saucepan over medium heat. Cover pan, and bring to a boil.
- Reduce heat to low then simmer for 10 minutes until tender. Drain beans and set aside.
- Heat olive oil in a skillet over medium heat. Add the garlic and shallot and sauté until garlic is lightly browned.
- Stir in tomatoes and cook until just soft; stirring occasionally. Sprinkle with pepper and basil then drizzle with honey.
- Pour the tomato mixture over the green beans, and toss gently to blend.
