13. Bacon, Lettuce, and Orange Salad

Ingredients
- 1/2 pound gluten-free, nitrite/nitrate-free bacon
- 15 ounce mandarin oranges
- 1 bunch green onion, diced
- 3/4 cup slivered almonds
- 1 head red leaf lettuce, torn into bite-size pieces
- 2 green bell peppers, diced
Dressing:
- 1/4 cup olive oil
- 3 tablespoons raw honey
- 2 tablespoons cider vinegar
- 1/2 teaspoon Dijon mustard
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon sea salt
Directions
- Cook bacon until evenly brown in a medium skillet over medium-high heat. Drain on paper towels and cool. Crumble bacon and place in a large mixing bowl.
- Add the oranges, green onion, almonds, lettuce, and bell peppers.
- Stir together the dressing ingredients in a small bowl then toss with the bacon mixture.
