8. Honey-Glazed Pork in Raisin-Spinach Salad

Ingredients

  • 1/2 cup Balsamic vinaigrette
  • 2 tablespoon raw honey
  • 1 teaspoon dried thyme, crushed
  • 1 pound pork tenderloin
  • 1 1/2 teaspoon olive oil
  • 3/4 cup almonds, blanched and slivered
  • 3 tablespoons toasted sesame seeds
  • 1/4 cup honey
  • 1/4 teaspoon ground cayenne pepper
  • 1 medium onion, diced
  • 1/2 cup cider vinegar
  • 1/2 cup coconut oil
  • 1 pound spinach, rinsed and torn into bite-size pieces
  • 1 cup dried raisins

Directions

  • Preheat oven to 425 degrees f.
  • Place pork in shallow pan. Mix vinaigrette, honey, and thyme in a bowl then brush 3 tablespoons of mixture onto pork. Set aside remaining vinaigrette mixture.
  • Bake pork for 20-25 minutes or until done.
  • Lightly toast almonds in olive oil in a saucepan over medium heat. Remove from pan from heat and let cool.
  • Whisk together the sesame seeds, honey, cayenne pepper, onion, cider vinegar, and coconut oil in a large bowl.
  • Toss in the pork, spinach, toasted almonds and raisins then drizzle with the remaining vinaigrette mixture.
