8. Honey-Glazed Pork in Raisin-Spinach Salad

Ingredients
- 1/2 cup Balsamic vinaigrette
- 2 tablespoon raw honey
- 1 teaspoon dried thyme, crushed
- 1 pound pork tenderloin
- 1 1/2 teaspoon olive oil
- 3/4 cup almonds, blanched and slivered
- 3 tablespoons toasted sesame seeds
- 1/4 cup honey
- 1/4 teaspoon ground cayenne pepper
- 1 medium onion, diced
- 1/2 cup cider vinegar
- 1/2 cup coconut oil
- 1 pound spinach, rinsed and torn into bite-size pieces
- 1 cup dried raisins
Directions
- Preheat oven to 425 degrees f.
- Place pork in shallow pan. Mix vinaigrette, honey, and thyme in a bowl then brush 3 tablespoons of mixture onto pork. Set aside remaining vinaigrette mixture.
- Bake pork for 20-25 minutes or until done.
- Lightly toast almonds in olive oil in a saucepan over medium heat. Remove from pan from heat and let cool.
- Whisk together the sesame seeds, honey, cayenne pepper, onion, cider vinegar, and coconut oil in a large bowl.
- Toss in the pork, spinach, toasted almonds and raisins then drizzle with the remaining vinaigrette mixture.
