3. Bacon and Green Beans

Ingredients

  • 10 slices nitrite/nitrate free lean bacon, diced
  • 1 tablespoon garlic, crushed
  • 1 small red bell pepper, finely chopped
  • 2 (10 ounce) packages frozen whole green beans
  • 1/2 teaspoon dried cayenne pepper
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup onion, finely chopped

Directions

  • Cook bacon in a large skillet set over medium-high heat until crisp. Remove bacon from pan and drain on paper towels.
  • Discard excess grease from the skillet, leaving about 2 tablespoons in the pan.
  • Sauté garlic and red bell pepper in the bacon grease over medium-high heat for 1 minute.
  • Stir in green beans, season with salt, pepper, and dried cayenne pepper; cook for about 10 minutes, or until beans are tender. Add the chopped onion halfway through cooking. Toss in the cooked bacon to the pan.
