4. Fruit Chicken Salad

Preparation time: 15 minutes + 1 hour chill time

Ingredients

  • 1 1/2 pounds cooked boneless chicken breast halves, cubed
  • 1 cup fresh strawberries, quartered
  • 1 cup fresh pineapple, cut into small chunks
  • 1/2 cup walnuts, chopped
  • 1 cup light mayonnaise
  • 1 clove garlic, finely chopped
  • 1 teaspoon dried dill weed
  • 1 teaspoon Dijon mustard
  • 1 teaspoon raw honey

Directions

  • Stir together the mayonnaise, garlic, dill weed, mustard, and honey in a bowl.
  • Mix the chicken, strawberries, pineapple, and walnuts in a large mixing bowl.
  • Toss chicken mixture with the prepared dressing.
  • Chill for at least 1 hour, or overnight for best flavor.
