2. Ethiopian Potatoes, Carrots, and Cabbage Dish

Ingredients

  • 1/4 cup olive oil
  • 2 cloves garlic, crushed and chopped
  • 1 medium onion, thinly sliced
  • 4 medium carrots, thinly sliced
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 1/2 head cabbage, shredded
  • 1 thumb-size ginger, grated
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon curry powder
  • 5 potatoes, peeled and cut into 1-inch cubes

Directions

  • Heat the olive oil in a skillet over medium heat. Add the garlic and sauté until brown. Add onion and carrots and cook for 5 minutes; season with salt and pepper.
  • Stir in cabbage, ginger, turmeric, and curry powder. Cook for another 15 to 20 minutes.
  • Add the potatoes then reduce heat to medium-low.
  • Cover skillet and cook for 20 to 30 minutes until potatoes are tender and soft.
