2. Ethiopian Potatoes, Carrots, and Cabbage Dish

Ingredients
- 1/4 cup olive oil
- 2 cloves garlic, crushed and chopped
- 1 medium onion, thinly sliced
- 4 medium carrots, thinly sliced
- 1 teaspoon sea salt
- 1/2 teaspoon ground black pepper
- 1/2 head cabbage, shredded
- 1 thumb-size ginger, grated
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon curry powder
- 5 potatoes, peeled and cut into 1-inch cubes
Directions
- Heat the olive oil in a skillet over medium heat. Add the garlic and sauté until brown. Add onion and carrots and cook for 5 minutes; season with salt and pepper.
- Stir in cabbage, ginger, turmeric, and curry powder. Cook for another 15 to 20 minutes.
- Add the potatoes then reduce heat to medium-low.
- Cover skillet and cook for 20 to 30 minutes until potatoes are tender and soft.
