10. Spanish Beef and Rice

Ingredients
- 2 tablespoons olive oil
- 1 cup uncooked gluten-free white rice
- 2 cloves garlic, crushed and chopped
- 1/2 cup onion, chopped
- 1/2 cup green bell pepper, chopped
- 1 pound ground beef
- 1/2 cup fresh mushrooms, sliced
- 1/2 cup slices olives
- 1 jalapeno pepper, diced
- 3/4 cup tomato sauce
- 1/2 cup low-sodium salsa
- 1 cup low-sodium beef broth
- 1/4 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup Monterey Jack cheese, shredded
- 1/4 cup parsley, chopped
Directions
- Heat olive oil in a large saucepan over medium heat. Add the rice and cook until lightly browned; stirring frequently.
- Stir in garlic, onion, and bell pepper. Sauté for 5 minutes or until garlic is golden brown and onions are soft. Add the ground beef and sauté until browned; drain excess fat.
- Add the mushrooms, olives, tomato sauce, salsa, and beef broth. Reduce heat to low, cover and simmer for 20 minutes or until rice is cooked, stirring occasionally. Season with cumin, salt, pepper to taste.
- Sprinkle with cheese and parsley on top.
