Kartoffelsalat mit Garnelen

MITTAGESSEN – bürotauglich

Zubereitung: ca. 10 Minuten

ca. 350 kcal, 5 g RS

  • 150 g gekochte, abgekühlte Kartoffeln
  • 2 Frühlingszwiebeln
  • 140 g Garnelen, verzehrfertig
  • 60 g Canellini-Bohnen, gekocht oder Konserve (entspricht 26 g roh)
  • Saft von 1 Orange (ersatzweise Orangen-Direktsaft)
  • 50 g Naturjoghurt, 1,5 % Fett
  • Salz, Pfeffer, Curry
  • 1 TL Kokosflocken

1 Kartoffeln schälen und klein würfeln. Frühlingszwiebeln waschen, putzen und in feine Ringe schneiden.

2 Kartoffeln und Frühlingszwiebeln in einer Schüssel vorsichtig mit Garnelen, Canellini-Bohnen und Orangensaft vermischen.

3 Joghurt unter den Salat heben. Mit Salz, Pfeffer und Curry herzhaft abschmecken. Zum Schluss die Kokosflocken darüberstreuen.
