As a detail-oriented pastry chef, I absolutely love making art deco patterns on cakes! It seriously makes me the happiest to sit for hours making tiny decorations and applying them carefully until each one is in its place. These sugar paste fans, which are hand cut and shaped, can be applied while they’re wet or dry. I waited for them to dry, so I could paint the bottoms gold and dust the edges with a bright purple powder dye to highlight the ridges (created with a veining tool) before applying them to the cake with royal icing.
