CHOCOLATE DRIPPING over cake tiers is very simple to produce and results in a festive, decadent cake design. A variety of icings pair well with ganache, including Rose Water–Raspberry Icing (page 67) and Espresso Icing (page 68); this tall tier features roughly spackled Strawberry-Basil Icing (page 67), which boasts flecks of fresh strawberry puree. Chocolate drips are a nice finish to a simple single tier or can be applied on a multi-tier cake.
