Stacking Cake Layers
Once you’ve iced all your cake layers, it’s time to stack them to make a completed cake or tier. For an open layered cake (without icing on the sides, like the cake pictured on page 190), this would be the final step of icing before inserting dowels for a tiered cake.

After chilling the iced cake layers
for about 10 minutes, remove them from the refrigerator. Using your
hand as a guide, carefully slide one cake layer off its cake board
and onto the base layer below. Repeat if adding more layers.

Place the last, un-iced layer (or
the final iced layer, if you are making an open layered cake) on
the very top. For tiered cakes, use scissors to trim away excess
cake board around the base, then place the cake and cake board atop
a larger cake board for handling.
