TRUFFLES, OF COURSE, are a delightful dessert on their own, but they can also be an unusually beautiful accent on a cake. The cake shown is Coconut Cake (page 85) with Espresso Icing (page 68), but truffles would also go well with a Mexican Chocolate Cake (page 73) with Lavender-Rosemary Icing (page 67) or Madagascar Vanilla Bean Cake (page 76) with Passion Fruit Icing (page 68).
Securing the truffles on the cake with toothpicks—inserting the toothpicks halfway into the truffles and then placing them into the cake—ensures that they stay in place and allows more options for placement within the design. Make sure to remove all toothpicks before serving to your guests!
